imap and pop are both mail storage servers.

the imap model has your mail permantly stay on the server.
this takes up more space and resources and requires users
to be logged on ( generally ) to process their mail. The
advantage is you can access the mail on the server from
any PC in the world with internet access and you can access
it from a Web Based mail program like IMP. You can put mail
into folders ( like To-Do, project1, project2, etc ) and
you can view the folders and the mail in the folders from
any imap client.

the pop model has you remove your mail from the server.
If your at home and you remove the mail, then access your
pop server from work, you won't see the mail that you stored
on your home PC. If you get mail at work, you won't see that
at home.
