Not all motherboards with on-board sound give you the capability to disable it.
I know, it seems stupid (because it is). If it is possible to disable it, you
should either be able to do it in the BIOS in peripherals or something like
that, or there should be a jumper. If not, you're out of luck on completely
disabling it. In windows, you can disable it in system manager, but as you
say, you don't have windows, and if you did I'm sure you wouldn't be running it.
Besides, it would only be disabled while IN windows, a reboot would re-enable
it. Check the BIOS and take another look at the jumpers -- if not, I'm afraid
you're SOL. Sorry...
