Before you go and get off in the weeds, consider this.

Android services run as root. They can see everything that passes through
your phone already. I'd wager that the Samsung messaging app is just a
wrapper around messaging that the native OS already handles. High chance
that Google already sees your messages.

Also, Samsung is certainly no saint. A lot of those Korean megacorps have
some very shady history.

If you want privacy, your only real option is to load an unofficial ROM.
GrapheneOS, LineageOS, /e/, Cyanogen, etc. Personally I'm waiting to see
what the hardware partnership between Graphene and Motorola is going to
produce.
