I don't have any direct experience with Linux and mainframes. I have some
dated experience with Unix and mainframes.
My guess would be that if you really have a Linux mainframe and want to
direct link with an MVS/OS mainframe you are talking IBM as a supplier.
Samba offers an "mvs" package that runs on some MVS/OS platforms that
will talk to an Intel-based Linux host.
IBM actually supports many network protocols including NFS. Usually IBM
makes it so expensive it is not worth it. "Sneaker net" turns out to be about
the best way. Usually via tape.
