Well, features like conference rooms are typically add
ons to the base jabber server.

On my jabber server, I have the conference room server
running as conference.jabber.cirr.com, and I've got a transport
to MSN running as msn.jabber.cirr.com. I'm looking at putting
up the transports to AIM and Yahoo too.. Then I'll be able to
connect to all the networks via my Jabber client.

About Google talk, they have recently opened their
Server2Server component, so GoogleTalk members can now
communicate with other "federated" jabber servers.
