No guru here....

But: 

For SMTP: Postfix all the way

For POP3/Imap: Courier IMAP

2 other things that are also preferable is LDAP for virtual hosting and
Maildrop for your mailbox format.

Basically, you store all your user info and domain stuff in LDAP and
tell Postfix, Courier and Maildrop to look at LDAP for the way to
route/deliver the email.

Not the easiest to set but I definitely prefer it over the other methods
I have seen.
