For a uni-proc board, I have to recommend the Gigabyte GA7VAXP, which
I've had since last October/November-ish.  I've got a 2100+ with
512MB PC3200 (it supports up to 3GB), and I have had no problems
whatsoever.  

It seems to meet all of your requirements.  One thing though, I have
not tried to use the on-board RAID controller as anything but a
second IDE controller.

There's even a more recent version of this board that has Serial-ATA
on-board.
