Are the server processes really running after you run '/etc/init.d/nfs
start'?

I don't know how Redhat is structured these days, but on SuSE 8.0 you have
to run the 'nfsserver' script to start the server processes, not the 'nfs'
script.  Maybe Redhat has done something similar.
