Yes you can do it.  You just have to keep the twisted pairs together.
(1&2,3&6)   Either crimp two RJ-45 connectors at each end of the cable
run, or make a custom splitter if you already have jacks in the walls. 
You can make a cheap splitter with three RJ-45s and a piece of CAT5.
