Warning! My opinions follow:
Both are a little unstable. I've noticed that Redhat does not allow me
to mount drives that weren't discovered during the initial installation.
I did not work on finding out why. This came about due to installing an
ORB drive as hdc. I reinstalled with Mandrake because I did not want to
fight it anymore.
The 2.4.3 kernel that both come with has some quirks, and may destroy
data in some circumstances.
Mandrake uses more optimizations in the kernel to get you better
performance. For that reason, it can have more trouble on more machines.
I've had Redhat 7.1 install on a machine that Mandrake 8.0 refused to
install on.
It boils down to "mandrake is prettier", and may suit your personal
preference better.
Redhat 6.2 is still best for servers. By Redhat 7.2, it should be very
good for that purpose. In Redhat's lifetime, version 3.03, 4.2, 5.2, and
6.2 were the ones that had the best quality and were worth using as
servers. 4.0 and 4.1 were buggy, 5.0 was very buggy, 5.1 was decent, 6.0
was very buggy, 6.1 was decent, and 7.0 was a disaster in terms of bugs.
7.1 can probably be classified as decent. I have used all of the previous
versions mentioned in the third sentence for servers.
